almond flour
erythritol
salt
butter (can use coconut oil if wanting dairy free)
large eggs
erythritol or less according to taste
butter melted
lemons, juice and zest
vanilla extract
almond flour
Preheat oven to 180C
Grease and line with baking paper a 28 x 18 cm slice tin and set aside
Mix dry ingredients together
Melt butter or coconut equivalent in the microwave
Add to a bowl of melted butter/coconut , mix by hand until it forms a dough ball
A food processor can be used but I don't like washing it up!
Press evenly into bottom of the slice tin using the back of a spoon
Bake in the middle of the oven for 15 mins. As it bakes prepare the lemon filling.
In the same bowl used for making dough (less washing up)
Add all the ingredients listed and mix with stick mixer
Let cool and put in the fridge for at least 2 hours before cutting.
Cut into squares and sift powdered erythritol over the top for a nice finish.
Can be served by itself or a dollop of cream and berries.
If cut into 12 has 2 grams carb a serve
