This recipe is an adaption of Nigella's famous Clementine Cake


It is Keto, gluten and dairy free
I love this cake as it only requires one bowl and never fails to impress.

Ingredients for 10 Servings

  • 250 gr

    almond meal

  • 6

    large eggs

  • 2

    navel orange

  • 100 gr

    erythritol

  • 1 tsp

    baking powder (gluten free if required)

  • 1

    ring tin with hole in the middle

  • 1

    saucepan

  • 1

    mixing bowl

  • 1

    handheld stick mixer

  • aluminium foil

Method

  1. Preheat the oven to 180C

  2. Grease a ring tin with hole in the middle ( i like the hole in the middle because this cake is very moist and cooking to the centre takes a while , this reduces cooking time and looks fabulous.

  3. Wash the oranges and place them in a saucepan of water with enough to cover them

  4. Boil for at least 1 hour, reduce to a simmer, place a lid on and check water
    levels frequently

  5. Drain oranges and place them in large mixing bowl

  6. Roughly cut them up to help cooling

  7. When cooler add all other ingredients

  8. Mix with hand held stick mixer until rind very small and well combined

  9. Pour into ring ting and cook for 40 mins then cover with foil for another 10 minutes (the top browns too much otherwise)

Low carb baking tips

Erythritol is a sugar replacement that doesn't spike blood sugar or insulin response. Erythritol is added into monk fruit which you can find this at Coles/Woolworth sugar section and in most health shops.
